The Cellars-Hohenhort and Eagles’ Nest showcase Constantia bounty

THE Cellars-Hohenort is joining forces with Eagles’ Nest to present a gastronomic event to showcase the bounty of the Constantia Valley. The food and wine pairing dinner will take place on October 1, 2021 in The Conservatory restaurant, and will feature a delicious five-course menu presented by executive chef Tronette Dippenaar. Eagles’ Nest winemaker Doug Mylrea will co-host the event to introduce hand-selected wines from Cape Town’s “own vineyard”, to match each course.

Chef and winemaker have created an exciting culinary experience that begins with salmon tartare, avocado salsa, soya gel paired with The Little Eagle Rosé 2021, followed by South Atlantic tuna tataki with a sesame and lime dressing and wakame rice cracker, paired with Eagles’ Nest Sauvignon Blanc 2021.

The Conservatory

Kataifi wrapped tiger prawns will then be served with charred corn salsa, lemon, crème fraise, herb oil and Eagles’ Nest Viognier 2018, followed by a refreshing apple and fennel sorbet. This leads to the main course of grilled Outeniqua springbok loin, king oyster mushroom, pearl onions, cranberry and red cabbage chutney, red wine jus, complemented by Eagle’s Nest Shiraz 2016.

The cheese course of Kleinrivier Gruberg, mebos custard, pickled onion, hazelnut pressed rusk, sundried tomato will bring dinner to a close, perfectly matched with the Eagles’ Nest Merlot 2016.
