Don’t miss the prix fixe menu at TTK Fledgelings

SOME say Christmas is the most wonderful time of the year. Like Andy Williams, who sang about it. But for me, it’s winter, which I’ve probably mentioned before (because I never let an opportunity slide to declare how much I love it, even now in autumn) and this means restaurant specials. This year, the Luke Dale Roberts Group of Restaurants is offering prix fixe menus until 31 October 2024 at all of the LDR restaurants. See here.

These include The Pot Luck Clubs in Cape Town and Johannesburg, The Shortmarket Club in Rosebank, and TTK Fledgelings where I was invited for lunch the other day. The multi-course lunch is R450 a person, and begins with amagwinya (vetkoek) oh so golden and flecked with salt, served with smoked snoek pâté. All around me, the other guests were having cocktails which, by all accounts, were fabulous.

The menu we had wasn’t identical to the one that came out with the press release but as it clearly states: All menus are subject to change without notice. Vegetarian and pescatarian menus are available. No vegan, alcohol- or allium-free menus are available. When did onions become a thing? Anyway.

The first course was kudu bresaola with truffle and garlic emulsion, parmesan shavings and red wine pickled mushrooms and chickpea croutons. Scrumptious. It was followed by bouillabaisse – hake, mussels, prawn, rouille and a square of focaccia. The soup was so flavoursome it elicited a spontaneous yelp of delight from the person sitting next to me. “Did I do that out loud?” she wondered.

The main course was duck salad, not what you’d think is a wintery dish, but nevertheless. It’s a confit duck leg with truffle, port and balsamic dressing, king oyster mushrooms, walnuts and mizu. “Duck done right,” was my comment to anyone who cared to listen – dark pink and tender.

I didn’t stay for dessert because missing traffic won out over pear with red wine and muscadel, vanilla ice cream and cinnamon crumb. I’m sure it was very lovely too. Do take advantage of these wonderful offers; I can’t wait to take myself to Pot Luck Club very soon.

In the striking and beautiful space once occupied by the renowned The Test Kitchen, a new culinary journey began in 2021 as TTK Fledgelings took flight. Born from a vision to empower individuals with boundless passion and determination but lacking formal chef’s or guest service training, TTK Fledgelings offers a unique opportunity to carve out a career in the world of hospitality.

With a steadfast commitment to in-service training, TTK Fledgelings talents are mentored and guided by Luke Dale Roberts and Head Chef Nathan Clarke.  This innovative approach sees our ‘Fledgelings’ immersed in the daily operations, learning the intricacies of the trade while contributing to the restaurant’s dynamic environment. Front-of-house staff, under the tutelage of experienced mentors, are coached to excel in hosting guests with a warm and professional touch. Each Fledgeling is employed full-time, receiving invaluable on-the-job training that sets the stage for their culinary and service journey.

“Our hope is to provide Fledgelings with a hands-on experience at the heart of a professional restaurant – be it behind the pass or out on the floor. It’s a deliberate, slow simmering process, not a rapid boil, to ensure that by the end, we produce seasoned chefs and talented service staff,” says Luke.

TTK Fledgelings invites the diner to embark on a culinary adventure where dreams are not just envisioned but brought to life alongside some of the finest food that Cape Town has to offer.
