Surviving, thriving and sipping 2019 Survivor Wines Cap Classique

Despite one of the worst droughts experienced in the Cape winelands, summer conditions delivered superior Chardonnay grapes with good acidity and lower pH levels. The grapes were harvested from a parcel of vines in the Darling district – ideal for an indulgent Cap Classique.

To highlight the lush character of the grapes, the winemaker followed reductive winemaking practices to retain as much flavour and complexity from the juice. After primary fermentation in stainless steel tanks, secondary fermentation commenced in bottle after which the wine was matured on the lees for 16 months.

This Cap Classique embodies the true character of Survivor Wines, a top-quality expressive wine with a divine sense of place and one that calls for celebration. The Survivor Cap Classique is characterised by a fine mousse with delicate yeasty notes. Layered with lemon, lime, green apples, and a creamy complexity that lingers in the mouth, this wine showcases typical Darling minerality, vibrant acidity and a slightly saline finish. This wine pairs perfectly with fresh oysters, sushi, Asian cuisines, or a decadent sweet treat.
