Surviving, thriving and sipping 2019 Survivor Wines Cap Classique

0

IF the last two years have taught us anything, it is that life is fleeting and often uncertain. Still, just like its resident Nguni cow, Survivor, Survivor Wines is resilient, adaptable, and able to thrive in even the most unlikely conditions. So raise your glasses and celebrate the small things, the big things, the joyous occasions, and the moments we overcame.

Despite one of the worst droughts experienced in the Cape winelands, summer conditions delivered superior Chardonnay grapes with good acidity and lower pH levels. The grapes were harvested from a parcel of vines in the Darling district – ideal for an indulgent Cap Classique.

To highlight the lush character of the grapes, the winemaker followed reductive winemaking practices to retain as much flavour and complexity from the juice. After primary fermentation in stainless steel tanks, secondary fermentation commenced in bottle after which the wine was matured on the lees for 16 months.

This Cap Classique embodies the true character of Survivor Wines, a top-quality expressive wine with a divine sense of place and one that calls for celebration. The Survivor Cap Classique is characterised by a fine mousse with delicate yeasty notes. Layered with lemon, lime, green apples, and a creamy complexity that lingers in the mouth, this wine showcases typical Darling minerality, vibrant acidity and a slightly saline finish. This wine pairs perfectly with fresh oysters, sushi, Asian cuisines, or a decadent sweet treat.

The favourite pairing with this wine, however, is the company of good friends and loved ones, those who bring out the best in you and those who survived alongside you. With a flute in hand, celebrate the big wins and the special occasions, the small hurdles, and the life you are living.
