Exciting changes ahead at La Colombe as James Gaag is appointed executive chef

LA COLOMBE chef proprietor Scot Kirton is pleased to announce the appointment of current head chef, James Gaag, as executive chef.

“James has headed up the La Colombe kitchen for the past four years, and at the young age of 29, has proved himself to be one of the leading innovative chefs in South Africa. He has lead the committed team in the kitchen faultlessly, and we are delighted to appoint him in this prestigious role,” says Kirton.

Kirton will be acutely involved along every step of the way, as La Colombe has some exciting renovation plans on the immediate horizon. He will be working daily with the chefs from La Colombe, Foxcroft and La Petite Colombe, and remain hands-on in the kitchens to ensure the standards for which the world-class La Colombe Group is renowned.

La Colombe will be closing on May 28 for six weeks for a major revamp. There is much anticipation, as long-standing ex-La Colombe sous chef, Jess van Dyk, will be returning to La Colombe as head chef, with Keegan Brathewaite stepping in as the sous chef.

Gaag comments: “It is fantastic to finally realise my dream of running La Colombe. Taking over the reins is something I have aspired to for the past eight years. I’m extremely excited for this new and exciting chapter, and the challenges which lie ahead.”

When it comes to food, Gaag believes a balance of flavour comes first. Food needs to be immediately delicious and inviting, not overthought, overworked or overcomplicated. Flavour is paramount and key in making great food, and also running a great kitchen.
